Eggless Whole Wheat Banana Bread

Okay, so this marks the beginning of my blogger journey, and I've decided to kick it off with a cake recipe as my first blog post.

I've been baking for over a decade now, but since becoming a mother, I've shifted my focus to healthy baking. Providing nutritious food to our little ones is every mother's aspiration, isn't it?




This wholesome loaf is a delightful treat for both kids and adults. It's healthy and guilt-free, and who can resist a healthy dessert or a tea-time bread?

Bananas are considered one of the superfoods for kids due to their strong fragrance and taste. When used as the main ingredient in baking, they impart a robust flavor with a delightful aroma.



Whole Wheat Banana Bread Recipe

Ingredients:

  • 1 cup whole wheat flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon cinnamon powder
  • 3 very ripe bananas
  • 1/4 cup brown sugar (or you can use a combination of jaggery and white sugar)
  • 1/8 cup oil (refined or olive)
  • 1/4 cup milk
  • 1/2 teaspoon vanilla extract (optional)
  • A pinch of salt

Additional:

  • Chocolate chips or walnuts (optional)

Recipe:

  1. Preheat the oven to 180 degrees Celsius and grease a baking tray.
  2. In a large bowl, mash the bananas and then add the oil and milk, mixing well.
  3. Stir in the vanilla essence.
  4. In a separate bowl, combine all the dry ingredients.
  5. Now, combine the dry and wet ingredients and mix thoroughly. The batter will be thick but easy to manage. If it seems too thick, add a little milk to adjust the consistency.
  6. Optionally, add chocolate chips or walnuts.
  7. Transfer the batter to the baking tray and bake for 35 minutes or until a toothpick inserted into the center of the loaf comes out clean.
  8. Allow it to cool for half an hour before slicing.
