As a working mother, my life was heavily dependent on domestic help. When Covid-19 reached India, the first thing most mothers, including myself, did was grant paid leave to our maids. I could manage for a week, but after the lockdown, things changed, and I started panicking.
The biggest problem was how to keep vegetables fresh for a longer time, as we couldn't go shopping every day. Fortunately, I received some amazing tips from my mother on how to prevent vegetables from spoiling. So far, they have worked for me, and we didn't have to step out of the house every other day to buy vegetables.
Follow the tips below to keep vegetables fresh for a longer time:
- Buy a mix of tomatoes—green, red, and orange.
- Separate the tomatoes by their color. Green tomatoes take some time to ripen, so keep them in the refrigerator in a plastic bag.
- Make puree from all the ripe tomatoes and freeze it in an ice tray for 2-3 hours.
- Once the puree is in ice form, transfer it to an airtight container.
- You can also chop a few tomatoes and freeze them; they can be used for a month without spoiling.
- Peel and wash all the garlic.
- Keep it in an airtight container in the refrigerator. It can stay fresh for a month.
- Wash the ginger and remove any dirt.
- Allow it to dry for some time.
- Store it in a plastic bag or container in the refrigerator. It will remain fresh for 20 days or more.
- Rinse all the chilies and let them dry.
- Remove stems from the whole batch and place all the chilies in an airtight container or zip lock bag in the refrigerator.
- Thoroughly wash the cauliflower and remove any worms.
- Chop the cauliflower florets and store them in a zip lock bag or container in the refrigerator. They will stay fresh for 15 days.
- Wash the ladyfingers thoroughly with water and let them dry for 30 minutes to 1 hour.
- Store them in a plastic bag and keep them in the refrigerator. They will remain fresh for 2 weeks.
- Wash the whole batch, removing all dirt, and let them dry for 30 minutes or more.
- Chop the spring onion and store it in an airtight container in the refrigerator.
All the pictures above were taken 10 days after buying the vegetables, so you can see how fresh they still look.
For me, this has reduced the chopping work, and I no longer have to go through the hassle of buying vegetables every two days.
